Nick's Pasta Salad, revised

 

Boil 24oz (2 12oz packages) multicolored spiral (aka rotini) pasta for exactly 12 minutes. While pasta is boiling, make 1 packet Good Seasonings Italian dressing with 1/2 cup canola oil* and 1/4 cup balsamic vinegar. Add 1 teaspoon crushed red pepper flakes. Whisk intermittently while preparing the following: 1 cucumber, peeled and diced, 1 red pepper, diced, 1 green pepper, diced, 1 shallot, sliced very thin, and 1 broccoli crown, cut into small florets.

Drain pasta. Rinse with cold water until pasta is room temperature or colder. Mix pasta and veggies in large bowl and add 2 6oz jars marinated artichoke hearts (drained) and 1 3.8oz can black olives (drained). Drizzle dressing on top and stir until all ingredients are equally distributed. Refrigerate for at least 2 hours before serving. Just before serving, add 6oz shredded parmesan cheese and stir until well-mixed.

* Olive oil, unfortunately, will congeal during the refrigeration/marination portion.
