Begin to cook 2 1/2 pounds hot Italian sausage on grill or in cast-iron skillet. Dice 1 onions and saute in 1 tablespoon olive oil. When onions are translucent, add 2 cloves minced garlic. Saute for a few minutes, then add 1 pound cleaned, destemmed, and sliced mushrooms. Saute for a few more minutes, then add 1/2 cup cheap merlot. Saute for a few more minutes, then add 1 16oz can crushed tomatoes, 1 8oz can tomato sauce, 3/4 teaspoons basil, 3/4 teaspoons oregano, 3/4 teaspoons rosemary, and 1 1/2 teaspoon crushed red pepper flakes. Simmer under medium low heat for approximately 1 1/2 hours while stirring frequently and cooking remainder of sausage.

Cut sausage into bite-size pieces. Grate 1/2 pound mozzarella cheese and 4oz parmesan cheese. When sauce has 1/2 hour left to simmer, boil 3/4 pound ziti and drain. Mix sausage and ziti in 9x13 casserole dish. Add 1/2 parmesan cheese to sauce, then add sauce to casserole dish. Stir until sauce, pasta, and sausage are evenly distributed. Top with mozzarella and remainder of parmesan. Bake at 350 degrees for 20 minutes or until cheese is bubbly.
